This classic pot roast is the epitome of comfort, featuring succulent beef, rustic veggies, and a broth to remember.

Ingredients

  • 4 pounds beef chuck roast

  • Salt and ground black pepper

  • 2 tablespoons olive oil

  • 1 large onion, chopped

  • 3 cloves garlic, minced

  • 1 cup red wine

  • 2 cups beef broth

  • 3 carrots, cut into 2-inch chunks

  • 3 potatoes, cut into chunks

  • 1 celery stalk, cut into chunks

  • 2 bay leaves

  • 3 sprigs fresh thyme

Instructions

  • Preheat the oven to 275 degrees Fahrenheit. Season the beef generously with salt and pepper.
  • In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the roast and brown on all sides until it forms a nice crust, about 4-5 minutes per side. Remove and set aside.
  • In the same pot, add the onions and cook until translucent, about 3 minutes. Add the garlic and cook for another minute. Pour in the red wine, scraping the bottom of the pot to release any browned bits.
  • Return the browned roast to the pot. Add beef broth, carrots, potatoes, celery, bay leaves, and thyme.
  • Cover the pot and transfer to the preheated oven. Roast for about 4 hours, or until the meat is fork-tender.
  • Serve and enjoy!
