I officially have the best neighbors. A few weeks ago on my way to pick my older daughter up from preschool, my Korean friend from the community where I live, approached meand gave me a whole box of freshly picked blueberries. It's a blueberry season after all.

Since there was a lot of blueberries, I thought that a simple and easyblueberry dessert might be a good after dinner treat for my family.

As you already know, I'm obsessed with French food. Whenever I see an easy French recipe, I immediately start making it. Take this recent recipe of Mustard Chicken. So good!!
Anyways, after the birth of my second daughter, I rarely have much time for complicated recipes. So after I skimmed through the Internet, I found a great and easy French recipe to use up our blueberries.

Clafoutis is a light fruit custardy dessert, usually made with cherries. But, in fact, you can make it with whatever fruits or berries you have. We happened to have fresh blueberries and they worked perfectly in this dessert. If you have other berries, feel free to use them.

The recipe is so simple. Just mix everything in a standing blender and the batter is ready. I love it. No need to clean a pileof dirty dishes afterwards.

By the way, it's me taking a picture in a spoon reflection. Hi there!:)

This blueberry clafoutis comes out very puffy, soft and juicy. The batter resembles the one used to make pancakes and if you love pancakes, you'll fall in love with this easy rustic dessert.

Yes, I think soy milk or almond milk would be good substitutions.

Chefboobay here, I lightened the sugar, added a little maple syrup. Using all organic on hand ingredients made this recipe perfectly delicious,... how could the neighborhood not love the smell.

Waste of my beautiful blueberries. The clafoutis was a rubbery mess and we had to throw it away. We followed instructions to the tee. I would not recommend this recipe. I realize it’s JC’s recipe so I’m not blaming the original poster; just suggesting you consider another recipe to highlight any berries you have.

I now make this recipe regularly. It is so easy but looks and tastes as though it would take real skill to put together. I use whatever berries I have on hand and/or are in season. It is equally good with all.

Hi Diane! I'm so glad you like this recipe!
I agree, it is one of the easiest French dessert recipes. Surprisingly, I've made Clafoutis with blueberries only, but I definitely should try to make it with other fruits and berries as well.

FAQs

Why is my clafoutis rubbery? ›

With your clafoutis perhaps reduce the cooking time by five to 10 minutes or turn the oven down by 10 degrees. Make sure the eggs are the right size as too much egg white to flour will make a more rubbery texture.

What is Julia Child's best dessert? ›

Julia Child's timeless desserts - Charlotte Malakoff, Crêpes Suzette, and Chocolate Mousse - are a testament to the elegance and sophistication of French cuisine. Each dessert offers a unique and delightful experience, combining classic techniques with high-quality ingredients to create memorable flavors.

What is a clafoutis in English? ›

: a dessert consisting of a layer of fruit (such as cherries) topped with batter and baked.

How do you know when clafoutis are done? ›

Pour the batter over the cherries. 3. Bake until a thin knife inserted near the center of the clafouti comes out nearly clean (a few crumbs are fine) and the top is a deep golden color, about 35 to 40 minutes. If the top is brown before the custard is done, loosely cover with a sheet of foil.

Do you eat clafoutis hot or cold? ›

Clafoutis is most perfectly delicious when it's a bit warm or at room temperature, best eaten within an hour of coming out of the oven. Leftovers should be refrigerated, and they can for sure be enjoyed cold.

Why is my clafoutis runny? ›

Should Clafoutis be Runny? The perfect cherry clafoutis is custardy, not runny. It'll be moist, but the center shouldn't be liquid or runny. Too much fruit can cause runny clafoutis, so if the center of your clafoutis is uncooked after baking, you may want to use less fruit in the future.

Why is my egg bake rubbery? ›

Your egg casserole might be rubbery if you didn't cook the vegetables before. Moisture can lead to rubbery egg bakes. Make sure to thoroughly cook your vegetables and meat before adding to an egg bake!

How do you make baked eggs not rubbery? ›

Have a question?
  1. Try preheating your oven to 350°F (175°C) instead of 400°F. A lower temperature can help cook the eggs more evenly and avoid that unwanted rubbery texture.
  2. Start checking the eggs a bit earlier, around the 8-minute mark, to make sure you're not overcooking them.

Can you reheat clafoutis? ›

Cherry clafoutis can be served warm, at room temperature or cold. Can you reheat cherry clafoutis? You can reheat it in a 350 degree oven for a few minutes until just warm.

What does a clafoutis taste like? ›

How does clafoutis taste? Clafoutis has the texture of an oven-baked pancaked. It is sweet, but not terribly so, and the chunks of fresh fruit are enjoyable to the palate.
