Before you cook up your omelet, you have to find and prepare a few ingredients. Here’s what you need:

Eggs: You’ll want large chicken eggs of any kind, but organic is the best. Certified organic eggs come from hens that lived in cage-free areas with access to the outdoors, ate organic feed, naturally molted their feathers, and were only administered antibiotics when ill. While there’s some debate about flavor differences between organic and regular eggs, organic eggs are undoubtedly better for the chickens.

Woodier Italian or Mediterranean herbs, such as thyme, oregano, rosemary, and sage are delicious earthy additions but need to be finely chopped. If you don’t have fresh herbs on hand, dried will also work.

Paprika or red chili powder: Don’t have fresh green chili peppers or want to add even more heat? Try adding some red chili powder or paprika. For extra depth, try using smoked paprika for added smoky flavor.

Turmeric: Turmeric is a spice that comes from the root of a flowering plant. It can be used fresh or in powdered form, and is believed to have several health benefits—the most notable being its anti-inflammatory properties.

This comes from a compound in turmeric called curcumin, which only makes up 3% of turmeric by weight and is not easily absorbed by the body. To help your body make the most of what little curcumin it ingests, pair turmeric with a compound called piperine (found in black pepper).

While the health benefits of turmeric are debatable, it’s certainly a tasty addition to this cheese omelette.

Spice powder: While optional, a pinch of powdered spice or spice mix, such as allspice or Indian garam masala, will add some extra warmth and complexity to your omelet. Experiment and see what combination of spices you like!

2. Beat the eggs until frothy.

3. Add oil to a hot pan. Saute the veggies with salt until done to your liking.

4. Add spice powders – chili powder & garam masala.

5. Spread the mixture, then pour the eggs.

6. Allow to cook until the base is set, then flip it.

7. When it is cooked on both the sides, spread grated cheese as desired. You can also skip garam masala, red chili powder & add Italian herbs if you like.

8. Fold the omelette and cook on a low heat until the cheese melts.

9. Serve cheese omelette hot or warm.

How to serve a cheese omelette

There are so many ways to serve an omelet. You can eat it on its own, or with some vegetables and potatoes or rice on the side. Stuff your omelet between sliced bread, biscuits, or croissants to make flavorful sandwiches. You can roll the omelet in a tortilla or roti with some spreads and pickles to make a healthy vegetarian wrap.

If you’re serving a particularly large meal or a meal with lots of small dishes, like tapas, you can even cut up the omelet and serve it as a side.

Ingredients (US cup = 240ml )

  • 2 eggs
  • ¼ cup onions & bell peppers heaped, (use whatever you like)
  • Salt little ( cheese is salted so use little)
  • coriander leaves few, chopped
  • 1 ¼ tsp oil
  • Cheese as desired (cheddar or mozzarella) (¼ cup goes well)
  • 2 pinches red chilli powder
  • 1 pinch turmeric
  • 2 pinches garam masala or any spice powder or Italian herbs

Instructions

  • Whisk eggs well in a bowl.

  • Heat a pan with oil, when it is just hot enough add the onions, other veggies & salt. Saute on a high flame for 1 minute.

  • Add garam masala, turmeric and red chili powder. Mix well. Spread the mixture.

  • Reduce the flame to medium and pour the eggs.

  • Allow to cook until the base is set. Flip it and cook.

  • Fry it to and fro on both the sides until fully cooked. Then add the grated cheese as desired.

  • Fold it half way and cook on a low heat until the cheese melts.

  • Serve cheese omelette warm.
