Let’s make cheesy beef quesadillas! Our whole family loves this meal. And there’s a lot to love – this ground beef quesadilla recipe is comforting and delicious; easy and ready in 20 minutes. The ground beef is made just like my ground chicken tacos and then it’s layered with two layers of cheese for the ultimate layered gooey cheese quesadilla, just like my chicken fajita quesadillas, steak quesadillas and shrimp quesadillas. Serve it with quesadilla sauce if you want to be extra. 🙂

If you love Tex Mex meals like this one, be sure to try my bean and cheese burritos, turkey taco skillet, beef enchilada casserole, refried black beans, black bean tostadas, air fryer chicken flautas, and my virgin margarita mocktail next time!

Ingredients

  • Lean ground beef – Use whatever type of ground beef you like. If you use a higher fat content, drain off some of the fat if necessary. You can also use ground turkey, ground chicken, or your favorite plant-based ground beef.
  • Tomato paste – This is a secret ingredient that gives the beef rich and deep flavor. You could also use tomato sauce, but the paste adds a much deeper flavor.
  • Spices – Sea salt, chili powder, ground cumin, garlic powder, onion powder – we’re making a quick homemade taco seasoning that’s full of flavor.
  • Cheese – Use pre-shredded cheese as a shortcut or shred your own for the BEST quesadilla. You can use a Mexican blend, cheddar cheese, Monterey jack, or Chihuahua (quesadilla cheese). The most important factor is that you find a perfect melting cheese.
  • Tortillas – I’ve used flour tortillas, but you could also use corn tortillas or whole wheat tortillas.
  • Toppings – Lettuce, cilantro, salsa, sour cream, etc. (See a full list below)

As a Certified Intuitive Eating Counselor and someone with a nutrition degree…this question makes me cringe and so I’m always trying to offer up a different perspective when it comes to this question! This quesadilla recipe with ground beef is a great source of protein and makes for a filling and satisfying meal. Top it with some fresh vegetable toppings to round it out and add some fresh produce and you’ve got a meal that offers energy, protein, fat, produce, and flavor!

What goes inside a quesadilla?

I prefer to keep quesadillas pretty simple – and then going crazy with toppings. So this quesadilla with ground beef has just cheese and ground beef inside.

Are quesadillas authentic Mexican food?

Yes, cheese quesadillas are authentic but this beef quesadilla recipe reminds me of gringo-style tacos (aka ground beef tacos) so probably not something you would see in Mexico.

How to Feed Beef Quesadillas to the Whole Family

I get it, feeding kids can be tough! But following theDivision of Responsibilityand knowing your job and your child’s job makes it SO much more enjoyable. You’ll be able to feed your kids any meal, which will help ensure that they are eating a variety of nutritious foods – with plenty of play food sprinkled in.

I would recommend serving the quesadillas in a pinch bowl (taster bowl) if it’s a new or learning-to-like it food and let everyone build their own tacos. Serve the meal with a few items you know your kids will eat, like fruit, milk, and/or bread and butter.

FAQs

What is the best cheese for quesadillas? ›

Cheddar and Monterey Jack are standards of American-style quesadillas. But if you are planning ahead, consider that freshly grated cheese such as cheddar or Monterey Jack makes the meltiest quesadillas.

How do you make a quesadilla without it falling apart? ›

Only use about two heaping tablespoons of filling per large tortilla. Prepping your filling ahead of time is a good idea, making sure there's equal parts cheese to protein and/or vegetable. You want to use enough cheese because it will hold the whole thing together. Too little, and your filling will fall out.

What cheese do Mexicans use in quesadillas? ›

Traditional Mexican cheeses like Oaxaca cheese or Chihuahua cheese are commonly used in quesadillas because they melt easily and have a mild, slightly salty flavor. Other cheese options include Monterey Jack, Colby Jack, and mozzarella.

How to make a quesadilla better? ›

Toasting both sides of the tortillas takes an extra minute of your time but the results are more than worth it. It gives the tortilla a chance to better crisp up, withstanding any soggy fillings you might add. It makes the quesadilla easier to eat and easier to dunk in salsa, sour cream, and guacamole.

How to make a 2 tortilla quesadilla? ›

Heat your skillet over medium heat, pour in your oil, and add the first tortilla. Top with cheese and any other filling ingredients, making sure to evenly distribute them across the tortilla, then place the other tortilla over top. Cook until golden brown, then *carefully* flip the quesadilla and cook the other side.

How do you seal the edges of quesadillas? ›

Once it's hot, lay in a tortilla and sprinkle with two tablespoons of the cheese mix, making sure you leave a decent border all around the edge. When the cheese begins to melt, add a few slices of chilli and a pinch of epazote (or oregano), and fold over the tortilla, pressing it down to help seal it.

Should I season my cheese quesadilla? ›

Add just a few minutes to your prep time, and throw together my delicious 5 Minute Avocado Sauce - it's the perfect dip for your quesadilla! Spice it up! When you put the cheese on the tortilla, sprinkle with some chili powder, paprika, and cumin to add a little kick, or use your favorite taco seasoning.

Do I put butter on my quesadilla? ›

You could use butter but it has a tendency to burn. If you want the flavor of butter on your quesadillas melt a tablespoon in the microwave, stir in a little cooking oil and brush it on your tortillas. No, warm skillet enough to melt the cheese and warm other ingredients. The tortilla should brown on both sides.

Why are my quesadillas not crispy? ›

Too much fat will make your quesadilla soggy instead of crispy. Use just enough to coat the bottom of your skillet — about 1/2 teaspoon of butter or oil. Warm it in the skillet over medium to medium-high heat. Add the tortilla and top with cheese.

What can you use instead of cheese in a quesadilla? ›

These quesadillas are made with hummus instead of cheese, and they are absolutely delicious! Hummus quesadillas are a healthy dairy-free and vegan meal.

Should I cook quesadilla in oil or butter? ›

The oil promotes even browning and makes the tortilla nice and crispy. You could use butter but it has a tendency to burn. If you want the flavor of butter on your quesadillas melt a tablespoon in the microwave, stir in a little cooking oil and brush it on your tortillas.

What type of cheese is quesadilla cheese? ›

If you use pre-shredded cheese, I recommend using the thick-cut. Use a Mexican cheese if you can. Mexican melting cheeses like queso Oaxaca (quesillo), Chihuahua, Asadero, and Quesadilla are the best Mexican cheese for quesadillas. If you can't find any in a store near you, I recommend using Monterey Jack.

What is the best melting Mexican cheese for quesadillas? ›

Queso asadero is Mexican cheese that's great for melting. It is soft, white and creamy with a mild taste, and is often used to make pizzas, quesadillas and queso fundido.

What kind of cheese do Mexicans put on their tacos? ›

Cotija, either crumbled or grated will be the most authentic. Alternates would be Añejo, Enchilado or Chihuahua. For additional richness, crema (a sour cream product) can be added. Other Mexican cheeses like panela, queso asadero and queso fresco do not have much in the way of flavor to effectively garnish a taco.
