Chicken and Bacon Autumn Chopped Salad Recipe (1)

After a weekend of lots and lots of food, I was craving something a little bit lighter for dinner tonight, but with my husband being the “meat and potatoes” guy that he is, he doesn’t like the idea of having salad for a main course, so I added some chicken and crumbled bacon to make it more “manly”.

It was the perfect dinner for our family after all the food we devoured over the Thanksgiving holiday.

It felt nice to eat something that was a little on the lighter side of things. It was still extremely delicious and filling. It will definitely be making it’s rounds though the weekly menu plans at our home.

It was also perfect for lunch the next day. The dressing had soaked up into some of the chicken and veggies, and it was just as delicious, if not more.

This salad dressing combo is one of our favorites. It is so yummy and so simple to throw together. If you have never tried combining salad dressings, I recommend it. It adds a bunch of new and delicious flavor, you are sure to love.

what other cheese would be good on this salad?

I personally love the feta cheese on this salad, but I get it’s not for everyone. If you are looking to replace the feta cheese, I recommend trying goat cheese, blue cheese, or even parmesan cheese would be delicious on this one.

We made it with a sprinkle of grated mozzarella cheese, and that was also delicious.

Ingredients

  • 8 cups chopped romaine lettuce
  • 2 medium apples chopped, (pears are also delicious if you want to use those)
  • 1 cup dried cranberries Craisins
  • 1 cup chopped walnuts (pecans or almonds are also a yummy substitution)
  • 8 slices bacon crisp-cooked and crumbled, (we used turkey bacon- use what you want)
  • 6 ounces feta cheese crumbled
  • 2 grilled chicken breasts cooked and cubed
  • ¾ cup poppy seed salad dressing (I like Brianna's)
  • ¼ cup balsamic vinaigrette (I used store brand because it tastes just the same to me)

Instructions

  • In a large bowl, combine the lettuce, apples, cranberries, walnuts, bacon, chicken and feta cheese.

  • In a smaller bowl, combine poppy seed dressing with balsamic vinaigrette. Drizzle over salad right before serving. If you prefer your salad to have more dressing, feel free to experiment with the combination.

  • (This salad makes enough for about 6-8 servings. If you are not going to be eating it all in one sitting, only put dressing on what you will be eating or it will get all soggy.)

Notes

  • If you are looking to replace the feta cheese, I recommend trying goat cheese, blue cheese, or even parmesan cheese would be delicious on this one.

FAQs

What is the difference between a regular salad and a chopped salad? ›

Chop'd salads distinguish themselves by uniform bite-size cutting of all ingredients instead of intact leaves and large vegetable slices. This allows more flavor blending in each tasty bite!

Why are chopped salads so good? ›

In a tossed salad, you may taste two or even several ingredients at a time, but rarely are all present in each mouthful, and the proportion of flavors varies widely from bite to bite. But a well-made chopped salad presents you with a harmonious, balanced combination of sweet, salty, sour, and bitter flavors every time.

Why is it called chopped salad? ›

The name "chopped salad" refers to the fact most items in the salad are chopped into similar bite-size pieces for incorporating lots of ingredient textures and flavors in one bite.

What does a chopped salad contain? ›

Lettuce, olives, tomatoes, cucumber, cheese (usually parmesan or mozzarella balls), pepperoncini, onions, and if you like meat, throw in some chopped salami. What does it mean to ask for a salad chopped? It simply means that all the ingredients, including the lettuce, are chopped up small.

How long does chopped salad stay fresh? ›

Store the chopped salad in an airtight container. Place a paper towel on top of the salad to absorb excess moisture. Store in the refrigerator, away from any strong-smelling foods. Consume the chopped salad within 2-3 days of preparation.

Why do restaurant salads taste better than homemade? ›

Restaurants salt their salads.

This resulted in every bite tasting vibrant and flavorful. "Season your salad just like you would anything else," Simpson said. "Salt is a big difference between salads at home and salads in a restaurant." This doesn't mean you have to make your salads salty!

What are the most unhealthy salads? ›

Worst: Iceberg Wedge Salad

Thanks to the blue cheese or ranch dressing and bacon crumbles, it can pack in four times the fat of a T-bone steak. It also falls short in the nutrition department. That's because iceberg lettuce contains fewer vitamins and minerals than most dark leafy greens.

Why are restaurant salads so much better than homemade? ›

A restaurant salad has salt on it.

Most good restaurants season salad carefully — probably adding salt and pepper directly to the greens, not just the dressing. If you don't usually add salt to your salads, try sprinkling in a little flaky sea salt next time and see if it doesn't taste 100% better.

How do you keep chopped salad from turning brown? ›

How to Store Lettuce
  1. Wrap. Wrap whole heads of lettuce loosely in Glad® Food Storage Zipper Bags.
  2. Once cut, seal lettuce in a Glad® Food Storage Zipper Bag or a GladWare® food protection container.
  3. Place a lightly dampened paper towel in with the lettuce to keep it crisp.

How do you keep chopped salad crisp? ›

Make sure it's dry, then store it in zip top bags, or plastic containers, with a dry paper towel to absorb any moisture. Certain items I prep—like lettuce, melons, grapes, etc. If I'm feeling really with it, I'll chop onions, peppers, celery, etc and store in a mason jar.

Should I wash chopped salad? ›

Additional washing of ready-to-eat leafy green salads is not likely to increase safety. The risk of cross-contamination from food handlers and food contact surfaces used during washing may outweigh any safety benefit that further washing may do.

What tool is used to make chopped salad? ›

The salad chopper does have the advantage of acting as a simultaneous mixer and fine-dicer. Once I'd prepped everything, I piled each salad's ingredients on the cutting board and went ham with a mezzaluna chopper, using it to simultaneously chop and toss the ingredients together.

What is the difference between a chopped salad and a Cobb salad? ›
