Chili Lime Popcorn and Fall Schedules

So it’s starting to feel a bit more like fall the last few days. I’ve been liking the nicer weather and it being slightly cooler out, but wish I could be outside more enjoying it. I’m settling back into the school schedule and routines, and my work day doesn’t allow me to get outside as much as I might like. We have, however, been enjoying time in the morning and evenings outside when we can.

Joelle and I have been trying out meal prepping the last few weeks in an effort to help us stick to better eating habits; this means we make all of our meals on one day for the entire week. It makes for a long day but has helped us so far to eat better and want to order out or grab something quick much less. Full credit to Joelle who is doing basically all of the cooking and prepping right now with me back at school.

One of my weaknesses is a good salty savory snack, and this chili lime popcorn has become one of my new favorites. The lime flavor and chili seasoning go wonderfully together to create a snack that I just can’t put down. It’s a healthy treat that I don’t have to feel bad about (as long as I don’t eat the whole batch at once!).

We found this chili lime seasoning at Trader Joe’s, but the Tajin brand chili lime seasoning would work great as well in this recipe. I’m anxious to try it out on other stuff as well, but I can say it makes a perfect popcorn seasoning. Just pop up your popcorn in an air popper, coat with some oil and seasoning, and enjoy!

Using only 3 ingredients, this savory treat is sure to be a hit with kids and adults alike. Pop up a batch to use as snacks or in lunches throughout the week, or pop up a big bowl before settling down for movie night with your partner or with the family.   1. Heat coconut oil for 15-20 seconds in the microwave, or until melted
  2. Pop popcorn in an air popper
  3. Coat popcorn in melted coconut oil
  4. Sprinkle chili lime seasoning evenly over popcorn
  5. Mix up and taste, adjusting seasonings as needed
  6. Enjoy!

Notes

  1. Feel free to make this ahead of time for snacks throughout the week. It keeps in a Ziploc bag for several days!
