Farmer’s Breakfast

My mom grew up on an egg farm and she told me her dad would always be up and out of the house before the crack of dawn working. Then several hours later he would come in and eat a hearty breakfast and then be out the door again until dinner. This farmer’s breakfast is one of those hearty breakfasts to feed the hard working peeps at your house.

Farmer’s breakfast is a breakfast bowl of eggs, potatoes, bacon and cheese and it’s so satisfying. If you’re not a big breakfast eater make this as dinner! We love serving breakfast for dinner since we usually don’t have time in the morning for a proper breakfast.

Ingredients/Substitution Ideas

  • Red potatoes–you can also use Yukon gold potatoes or peeled Russet potatoes
  • Bacon
  • Eggs
  • Kosher salt
  • Pepper
  • Cheddar cheese–or another type of cheese you enjoy

Steps

  1. Prepare potatoes: Pour 1 ½ cups of water into bottom of Instant Pot. Add potatoes into a steamer basket and drop the basket into the Instant Pot.
  2. Pressure cook the potatoes: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up move the valve to venting and remove the lid. Move steamer basket out of the pot and set aside. Dump out the water and dry out the pot.
  3. Fry bacon: Turn Instant Pot to saute setting on “more”. When display says HOT add in the bacon and fry until crispy. Use a slotted spoon to move the bacon out of the pot to a paper towel lined plate.
  4. Cook eggs: Turn Instant Pot saute setting to “less”. Add in the eggs, salt and pepper. Stir gently and cook egg in the bacon grease to desired doneness. Stir in the potatoes and cheese.
  5. Serve: Taste test and salt and pepper to taste. Serve and enjoy! Try serving with salsa, tabasco or ketchup.

Notes/Tips

  • A faster way to make this meal is to do steps 3-5 on the stove in a frying pan while the potatoes are cooking in the Instant Pot. There will be an extra dish to clean but if quickness is most important then that is the way to go.
  • Serve as breakfast or breakfast for dinner! I like this with a little tabasco or salsa and some sliced green onions on top.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
  • Helpful tools I used:silicone steamer basket*, saute paddle*,cutting boards*,knives*,slotted spoon*
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days.

Description

Ingredients

  • 1 pound red potatoes, cut into cubes
  • 6 strips of bacon, cut into half inch pieces
  • 6 eggs, beaten
  • 1/4 tsp kosher salt
  • 1/4 tsp pepper
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Pour 1 ½ cups of water into bottom of Instant Pot. Add potatoes into a steamer basket and drop the basket into the Instant Pot.
