Cookies probably weren’t made in the Paleolithic period. But, it’s easy to make these baked treats using paleo friendly ingredients like homemade almond butter and honey. And they have more nutrition than snacks made with refined sugar and flour.

Perhaps no bake paleo almond cookies may have been made, but it’s unlikely. The reason is that people rarely at sweets other than fruits that were in season.

That’s why when following a natural paleo style eating plan sweet foods should be kept to a minimum. However, there’s no reason not to enjoy them on occasion without guilt.

These gluten free paleo almond butter cookies make for a guilt-free snack. And just one is sure to satisfy so you won’t go overboard.

Not only are these cookies easy to make, but they are also much healthier than the traditional kind. The reason is because there’s no processed ingredients or refined sugar.

Ingredients needed

The five ingredients needed are almond butter, honey (or maple syrup), egg (or flax egg), baking soda, and vanilla extract. To up the flavor you can add in some sea salt and or melted chocolate.

You’ll get 12 good sized cookies from the recipe. And, they can be frozen so you won’t eat them all at once. However, you can half the recipe easily if desired.

How to make chewy almond butter cookies

After preheating the oven and preparing the cookie sheet, gather all the ingredients.

Then, in a large mixing bowl, combine all the ingredients until smooth. (photos 1-8) The batter should thicken a bit if you let it sit for a few minutes.

Once the batter is set, using a cookie scoop to place mounds of the mixture about 1″ apart as they will spread.

Bake for 8-10 minutes. Keep an eye on them as you’ll want to remove them when the center has just set since these cookies will burn quickly.

Allow them to cool for a few minutes before transferring them to a rack to cool completely.

If desired, you can sprinkle the cookies with sea salt and or dip them in melted chocolate.

You can easily turn these cookies into a lactation treat. Or take them up a notch by dipping them in melted chocolate or sprinkling them with sea salt.

If you feel like snacking on something sweet, make a batch of these gluten free paleo almond butter cookies using flax seed meal instead of egg. Flax seed meal is said to help aid lactation so these cookies are perfect for nursing moms!

And if you have a nut allergy, simply replace the nut butter with sunflower seed butter. If the batter is too thin, you can always add in some flax meal.

Tips best 5-ingredient paleo cookies

It’s best to use the base of your hand or a fork to slightly flatten each cookie ball before baking. Just don’t flatten them too much as the do spread in the oven.

When baking these cookies, make sure to have the center just set. These cookies will burn quickly so keep an eye on them so they don’t get overcooked.

Ingredients

  • 1 cup almond butter
  • ⅓ cup coconut sugar, honey, or maple syrup
  • 1 egg, or flax egg (1 tbsp flax meal + 2.5 tbsp water, let sit 5 minutes)
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • sea salt or melted chocolate

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, mix together the ingredients until smooth and batter has thickened just a bit.
  3. Using a cookie scoop, place cookies 1" apart as they will spread.
  4. Bake for 8-10 minutes. You want the center to just set since these cookies will burn quickly.
  5. Remove the cookies from the oven and allow them to cool.
  6. Sprinkle the cookies with sea salt or dip in melted chocolate.

Notes
