  • Pasta: For this easy ground beef recipe, you can use any pasta noodle you prefer. Traditionally beef stroganoff is made with egg noodles, but I used casarecce. Penne, macaroni, gemelli, and fusilli are also great choices.
  • Ground beef: If you are using a ground beef with a higher fat percentage, I recommend draining the excess grease so that you do not end up with an oily sauce.
  • Worcestershire sauce: The Worcestershire sauce helps add a depth of flavor to the sauce. You could also substitute coconut aminos or soy sauce.
  • Mushrooms: I like to use shiitake mushrooms in this homemade Hamburger Helper Beef Stroganoff copycat recipe but you can use any mushrooms you prefer. Some of my favorites are cremini, maitake, and oyster mushrooms
  • Onions: You can use yellow onions, sweet onions, or even white onions.
  • Garlic: Fresh is best. But if you do not have any on hand, you can use jarred garlic, granulated garlic, dried minced garlic, or even Garlic Confit.
  • Sour cream: Sour cream is the star of the show when it comes to stroganoff. You can also use creme fraiche, or plain Greek yogurt.
  • Beef stock: If you do not have beef stock, you can also use chicken stock or even beef bouillon and water.

Step By Step Instructions

STEP 1: Cook the pasta as per the directions on the package, drain and set aside.

STEP 2: While the pasta is cooking, add the olive oil to a large skillet over medium-low heat. Once the oil is hot, add the onions to the pan and cook until soft and translucent.

STEP 3: Add the garlic and cook until fragrant, about 2 minutes.

STEP 4: Add the ground beef to the pan, breaking it up as it cooks. Once the ground beef is browned, drain any excess grease.

STEP 5: Add the Worcestershire sauce, mushrooms, salt, garlic, onion and paprika to the pan. Cook until the mushrooms are tender, about 6 minutes.

STEP 6: Add the beef stock and sour cream to the pan and mix until well combined.

STEP 7: Bring to a slow boil and then reduce heat to simmer. Simmer until the sauce has thickened. Taste, and add more salt and pepper, if needed.

  • 12 ounces dry pasta (I use this noodle)
  • 2 tablespoons olive oil (This is the brand I use) code kyndraholley for $5 off
  • 1 small yellow onion, diced
  • 4 cloves garlic, minced
  • 1 pound ground beef
  • 2 tablespoons Worcestershire sauce
  • 6 ounces shiitake mushrooms, thinly sliced
  • 1 ½ teaspoons sea salt
  • 1 teaspoon granulated garlic
  • 1 teaspoon granulated onion
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground black pepper
  • 1 cup beef stock
  • 1 ½ cups sour cream
  • OPTIONAL: 1 to 2 teaspoons corn starch or arrowroot (**see notes**)

    The sauce was perfection. I have never made stroganoff with regular pasta and it was so good - more hearty I would say - it’s perfect comfort food. I minced the mushrooms in a mini food processor since I love mushroom flavor and the family is a little picky and they didn’t even know they were in there they just add to the beefy flavor.

    This recipe is really really good! Super easy and super family friendly and the recipe makes a lot. We’re an OG hamburger helper family so this was a must try. My picky 8 year old ate it 2 nights in a row and my teen ate it for lunch and dinner 2 days in a row (and let friends steal bites and they loved it too). Both kids said it was like the hamburger helper stroganoff but way better.
