Cold pizza in the lunchbox is the most awesome lunch ever according to my kids and these Lunchbox Mini Pizzas are perfect for having in the freezer so they can have an awesome lunch any time! Made with a simple yoghurt dough, they are quick and easy to make and only need 6 basic ingredients. Make a big batch in under 25 minutes! They even contain a veggie- zucchini that we call green cheese. Lunchbox Mini Pizzas are set to become a lunchbox favourite for you (and the kids!).

Why you're going to love this recipe
Delicious hot or cold, pizza is the most awesome food! You can top it however you want and make it to suit everyone. I like to make it myself because then it has no nasties and because then I can hide some green cheese (zucchini) in it too. Making them mini for the lunchbox means we can always have pizza ready to go!

What goes into the recipe
- greek yoghurt- I make my own (DIY yoghurt) and it is quick and easy to make. If you don't it's worth giving it a try, it's literally a 5 minute hands on process. Otherwise, the Greek Style Yoghurt you can get at the supermarket or any natural pot set yoghurt.
- self raising flour- this is flour with the rising agent (baking powder) included. If you don't have self raising flour, you can add 2 tsps of baking powder per cup
- prosciutto- if you prefer, this can be swapped for ham, bacon, even cooked chicken
- zucchini- we call it green cheese! It pretty much melts down with the cheese and becomes barely noticeable.
- tomato paste- is perfect for this recipe, you don't need a lot- only 2 tbsps will cover them all!
How to make this recipe
- Combine the yoghurt and self raising flour in a large bowl (or the bowl of your mixer!)
- Mix until a cohesive dough is formed.
- Pour out onto a lightly floured surface.
- roll out to 5mm thick
- Cut using cutters if you like, or just cut into squares or rounds.
- Brush with tomato paste/pizza sauce.
- Top with prosciutto.
- Add grated zucchini
- Top with cheese.
- Bake for 12 minutes at 200 degrees celsius or until the cheese is golden and bubbly.
Expert Tips and FAQs
Why doesn't the dough need to rise?
Using yoghurt dough in these mini pizzas means that you don't need to wait for the dough to rise. The rising agent: self raising flour interacts with the acid in the yoghurt and produces a light, easy to manage dough that works really well for these mini pizzas.
How do I freeze these lunchbox mini pizzas?
Simple! Freeze until solid on a tray and then transfer to a container. They defrost well in the lunchbox, no need to defrost in the fridge!

Ingredients
- 1 cup greek yoghurt (I make my own)
- 2 cups self raising flour
- 2 tbsps tomato paste or leftover pasta sauce
- ½ zucchini finely grated
- 5 slices prosciutto cut into slivers
- 1.5 cups grated cheese i grated some cheddar
Instructions
Preheat the oven to 200 degrees celsius. (392F)
Combine the yoghurt and flour in the bowl of a mixer and mix until a dough forms. (You can also do this by hand for about 5 minutes)
Tip onto a floured board and roll out (I rolled mine to 30 by 50 cms).
Cut the shapes you want from the dough. Large cutters that are wide work best.
Transfer onto a lined oven tray then top with tomato paste/ pasta sauce.
Add the prosciutto.
Next top with the zucchini.
Cover with cheese.
Re-roll the rest of the dough and make another lot!
Bake for 12 minutes at 200 degrees celsius (392F).

I freeze them flat and then transfer to a container. I don't individually wrap anything in the freezer, as I don't like the waste from doing that.

I tend to pull them out the night before and pop them in the fridge. Mainly because I use a really efficient cooler bag and ice brick!

Do the children eat them heated at school or is it eaten at room or cool temperature? These look easy to make and delicious! I'm going to attempt to make them tonight to eat right away and freeze for at home snack but I would really love ve to pack them up for my child's lunch if they don't have to be heated and they still taste delicious cool with an ice pack. I'm new to packing his lunch and find it enjoyable but very stressful!

My issue with snacks that have ham/prosciutto/bacon/chicken in them, is how do you kill the potential bacteria in them, being a 'meat' product, when you are taking them out of the fridge/freezer and putting them straight into a lunch box so they are never heated before consumption?

I'll have to try making a gluten free version of this Kylie. I think I'll just swap the flour for GF flour and hope it works out. My son has yet to taste pizza, poor kid!
