Strawberries are officially in season and what better way to take advantage of this than by making some fresh strawberry extract? Strawberry extract will be the perfect addition to desserts, fruit salads, and to some ice-cold drinks and smoothies this summer to cool off!

Ingredients:

  • 8oz fresh strawberries
  • 8oz Everclear 195%

Instructions

  1. Rinse and pat dry strawberries.
  2. Remove the stems and discard.
  3. Slice the strawberries.
  4. Place strawberries in quart size mason jar.
  5. Fill mason jar with Everclear making sure that strawberries are submerged.
  6. Allow strawberries to extract for 2 to 3 months depending on your preference of flavor.
  7. If you want a stronger flavor you can add another 4oz of fresh strawberries and wait another month or two.
  8. Strain the remaining strawberries (they will be mushy) and throw them away.
  9. Place the finished extract in your favorite bottles or jars.

Hi Serrina,

Not sure why your strawberries would have been hard. If submerged in the alcohol, they should be mushy and soft.

My strawberries were hard not mushy. I used fresh ones and everclear, did I do something wrong? Its been sitting for 3 months.

Hi Memee, If you would like a stronger flavor of strawberries you can change them out at 1 month intervals according to your preference. Store in a cool, dark, and dry place for best results. Extract shelf life is about 3-4 years when stored properly.

I would like to try this but, how do you store it once it’s done? Do you have to take strawberries out and put new ones in?

When using fresh or frozen fruit a higher alcohol is called for because of the dilution from water in the fruit. We recommend using Everclear or rum at 195% alcohol. If you are using frozen fruit, drain any excess water before adding it to your alcohol. Extracts do not need to be refrigerated. If kept in a cool dark place they can last several years. Over time you will notice the flavor weakening. Happy Extracting!
