  • 5 cups chicken broth or 5 cups vegetable broth
  • 1 12 cups lentils, picked over and rinsed
  • 1 cup brown rice
  • 1 (2 lb) can tomatoes, drained,reserving juice,and chopped
  • 3 carrots, halved lengthwise and cut crosswise into ¼ inch pieces
  • 1 onion, chopped
  • 1 stalk celery, chopped
  • 3 cloves garlic, minced
  • 12 teaspoon crumbled dried basil
  • 12 teaspoon crumbled oregano
  • 14 teaspoon crumbled dried thyme
  • 1 bay leaf
  • 12 cup minced fresh parsley
  • 2 tablespoons cider vinegar
  • 1 lb smoked sausage (optional)

directions

  • Combine broth, 3 cups water, lentils, rice, tomatoes with reserved juice, carrots, onion, celery, herbs and sausage and bring to boil (do not add parsley and vinegar).
  • Simmer, covered, stirring occasionally, 45-55 minutes, or until lentils and rice are tender.
  • Stir in parsley and vinegar and season to taste.
  • Freezer Note: I often make up a double batch of this delicious soup, freezing half the batch, to provide me with a quick, nutritious dinner further on down the line when time is short and you don't want to resort to ordering in. Just defrost in microwave, reheat well and serve

  1. Another winner, e/a! We have a dear elderly neighbor who is very ill, and about all he enjoys these days is a good bowl of soup. I'm always trying to find new recipes to vary his simple diet, and this one was a huge hit. So much nutrition packed into each bowl---very important when an invalid can't eat much! His wife said, "Mmm--make that again!" I will!

  2. This was phenomenal, and got rave reviews from my boyfriend, father, and stepmom. Followed recipe exactly except for omitted celery (personal preference). Used andouille sausage and a mixture of 1/2 red lentils and 1/2 green. Completely forgot the cider vinegar at the end. Didn't need salt or anything - thank you!

  3. I wasn't nearly as impressed with this soup as I had expected to be. For as much as was in it, there was surprisingly little flavor. It did get better after a full day in the fridge, but I probably will not make it again unless I add dramatically more spice to perk it up.

  5. Even though we're in the full heat of summer, I was craving a simple, healthy soup. This recipe totally fit the bill. The only changes I made was to add some chopped mushroom and had to substitute a little cilantro for the parsley. Thanks for posting the recipe.

  1. This soup is fantastic. I did use ground turkey sausage and browned it with the onion instead of smoked sausage. I also used fresh tomatoes instead of canned, so I upped my broth. This is my first try with lentils...but not my last!!

  4. Delicious Soup! So Healthy! Made small substitutions: used 3.5 bouillon cubes with 5 cups water, added 8 oz tomato sauce, used 2 (16 oz) cans of stewed tomatoes. Didn't have the smoked sausage but took a few slices off a frozen ham in the freezer! I will definately try the sausage next time. Also added another cup of water near the end of the cooking to make it "soupier". The recipe makes a lot! I'm sure it will be a thick stew tonite but I'm looking forward to it. Thanks Evelyn!

  5. This was a lovely thick and filling soup. I made mine with a bacon hock instead of sausage. All the family enjoyed. A very tasty comfort meal. Thanks for sharing.

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages!I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure.So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call.What did I do wrong?Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths.I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
